Super Eats for Game Day – Saucy Wings and Thighs for #SundaySupper

I’m not a football fan.  There, I said it.  Hubby isn’t either.  We don’t watch football in our family at all.  Hubby will sit and watch a game if we’re at a party and it’s on, but that’s about the extent of it.  But I am a food fan.  And some Game Day traditional food is hard to resist.  And as a food blogger, I like to keep up with recipes people are interested in trying.  That’s why I’m happy to be partipating in this week’s #SundaySupper all about Super Eats for Game Day!  Thanks a lot to Heather over at Hezzi-D’s Books and Cooks for hosting this Game Day Bash!

I have always believed that good things come in threes.  So today I decided to make 3 different sauces that you can toss your wings in.  As I thought about what sauces I would like to make I came up with lots of ideas, and finally decided to make three inspired by different parts of the world.  Choose your favorite or use them all!  Each recipe includes instructions for baking the wings and thighs.  By the way, the package of chicken I found included drummies too, so, BONUS!

I started by prepping the chicken by rinsing it in warm water and patting it dry with paper towels.  Next I tossed it all in olive oil and sprinkled it with salt and pepper:

Next I spread them out on a baking sheet lined with aluminum foil and popped them in a 400° Fahrenheit oven.  While the chicken was baking I started the sauces.  First I put all of the ingredients (except for the chicken and the sesame seeds) for the Orange Teriyaki sauce in a saucepan over medium high heat and brought it to a boil.

Once it was boiling I redued the heat and let it simmer for about 20-25 minutes until it was reduced to a syrupy consistency.

Meanwhile I started on the other sauces.  I put all of the butter for both of the other sauces in the microwave to melt for a minute.  In a small bowl I combined the mustard (I used spicy brown) and honey.  When the butter was melted I added 2 Tbsp. of that to the honey mustard sauce and set it aside.  I added about 2 Tbsp. of butter to a saute pan and placed it over medium-high heat.  Once the butter was good an hot I added my garlic and cooked it until it was transluscent.  Then I added my homemade Greek Seasoning, removed it from the heat and added it to the remaining 6 Tbsp. butter.  I set that aside too.  When the Orange Teriyaki sauce was the consistency I wanted I removed it from the heat and set it aside as well.  The chicken only had 7-8 more minutes.  When it was done I took it out of the oven, divided it into 3 bowls and added the teriyaki sauce and honey mustard sauce to two of the bowls.  I added a good handful of the pretzel crumbs to the honey mustard chicken, tossed them and put them back on the baking sheets and in the oven for 5 more minutes.  While those were baking, I tossed my Mediterranean chicken in the sauce, and added the Feta cheese and finely chopped parsley and gave it a good toss as well.  When the Orange Teriyaki chicken came out I sprinkled it with sesame seeds.

Orange Teriyaki Wings and Thighs

Ingredients
  • 3 lbs. chicken wings and thighs
  • 9 oz. orange marmalade
  • ½ Tbsp. minced garlic
  • ½ Tbsp. minced ginger
  • 2 Tbsp. brown sugar
  • ⅓ c. soy sauce
  • 2 Tbsp. ketchup
  • 2 Tbsp. rice wine vinegar (or substitute white wine vinegar if you don’t have rice wine)
  • crushed red pepper flakes (if desired)
  • Sesame seeds (as needed for garnish)
Instructions
  1. Bake chicken as instructed in notes.
  2. Combine all ingredients (except chicken and sesame seeds) in a sauce pan and bring to a boil over medium heat.
  3. Reduce heat to a simmer and reduce until sauce is desired consistency, about 20-25 minutes.
  4. Place cooked chicken in a large bowl. Pour sauce over chicken and toss until all pieces are well coated.
  5. Return chicken to the oven for 5 minutes.
  6. Sprinkle with sesame seeds and serve.
Notes
How to Bake Chicken Wings and Thighs
INGREDIENTS
• 3 lbs. chicken wings and thighs
• 2-3 Tbsp. olive oil
• Salt and pepper (or seasoned salt), to taste
INSTRUCTIONS
1. Preheat oven to 400° Fahrenheit.
2. Place wings and thighs in a large bowl and coat with olive oil to coat. Sprinkle with salt and pepper or seasoned salt.
3. Spray a baking sheet with non-stick cooking spray and arrange chicken evenly (use more than one baking sheet if necessary).
4. Bake for 45-50 minutes, or until cooked through.
5. Toss in your choice of sauce and enjoy!

 
Mediterranean Wings and Thighs

Serves: 4
Ingredients
  • 3 lbs. chicken wings and thighs (cooked as directed in notes)
  • 1 stick butter
  • 5 cloves garlic, minced
  • 1 Tbsp. Greek Seasoning
  • 4 oz. Feta cheese, finely crumbled
  • Parsley, chopped (as needed for garnish)
Instructions
  1. Bake chicken as instructed in notes.
  2. In a small saucepan melt butter over medium heat (or melt butter in microwave). Pour most of the butter into a seperate bowl, leaving only a couple of Tablespoons in saucepan.
  3. Add minced garlic and cook until transluscent.
  4. Remove from heat and toss in Greek seasoning.
  5. Place cooked chicken in a large bowl. Pour butter sauce over chicken and toss until all pieces are well coated.
  6. Sprinkle Feta cheese and parsley over chicken and toss again.
  7. Serve and enjoy.

German Honey Mustard Pretzel Wings and Thighs

  • 2 Tbsp. butter
  • ¼ c. honey
  • ⅓ c. mustard
  • Pretzels (crushed or ground in a food processor)
Instructions
  1. Bake chicken as instructed in notes.
  2. Melt butter in a small saucepan over medium heat (or in the microwave). Add honey and mustard and stir to combine.
  3. Place cooked chicken in a large bowl. Pour butter sauce over chicken and toss until all pieces are well coated.
  4. Toss Pretzel crumbs over chicken and toss again until all of the chicken is coated.
  5. Return chicken to the oven for 5 minutes.
  6. Serve and enjoy!
Notes

All three recipes were delicious.  Hubby’s favorite was the German Honey Mustard, mine was the Orange Teriyaki.  The Mediterranean was super yummy too, it was hard to choose a favorite!

    • I really enjoyed the recipes too, even though I’m not a big fan of wings myself. I guess I’m not a fan because all I’ve tried are buffalo and they are too spicy for me, so I kindof lumped them all together. Thanks for stopping by! HUGS
